My overnight oats with peanut butter and banana are the perfect breakfast on-the-go. And yes, I added some chocolate too. Why? Because chocolate, peanut butter, and banana are a holy flavour trinity of course! And who even needs an excuse for a touch of chocolate at any given moment?
Overnight oats are ridiculously easy to make and so convenient to grab out of the fridge when you need a healthy, delicious and speedy breakfast or snack. Pop it into a jar, and you can take this tasty creation anywhere.
1 roughly mashed banana, plus another 1 to serve
1 cup rolled oats
1 cup milk
2 Tbs crunchy peanut butter, plus a little extra to serve
1 tsp cinnamon
1 tsp vanilla extract
2 blocks dark chocolate to serve (optional)
1. Combine mashed banana, oats, milk, peanut butter, cinnamon, and vanilla extract in a bowl and stir thoroughly.
2. Half mixture into two glass jars, close, and place in fridge overnight.
3. When ready to serve, top each jar with half a banana each, a little peanut butter, and a block of dark chocolate each – so easy!
