My brother turned 20 this week, and his celebratory drink was this very mint iced tea rum punch! His drink of choice is always rum with anything, but for some reason his preferred mix is iced tea. So when he came around for a birthday dinner, I decided to make this little punch for him.
And it’s delicious! I don’t often drink rum, but this is so refreshing that I might just turn to rum a little more often over the next few summer months. Plus, the iced tea alone is yum, so if you wanted to go non-alcoholic with this, you easily could.
How to make mint iced tea mint
3 peppermint tea bags
1L boiling water
2 Tbs raw honey
Juice of half a lemon
4 shots dark rum
Handful fresh mint
1. Pour boiling water into a 1 litre jug/jar and steep tea bags for approximately 10 – 15 minutes.
2. Add honey and lemon juice and stir to combine. Leave to cool.
3. Once cool, add rum, then tear and bruise mint before adding it too.
4. Stir, and pour over glasses filled with ice.
