Homemade muesli is everything! I love oats, but when the weather heats up, a steaming bowl of creamy oatmeal just won’t do. This is where my homemade muesli does the trick.
Muesli is actually SO simple to make. Plus, the homemade version is always healthier than the processed sugary kind you find in stores.
Your homemade muesli can be done within 30 minutes, and you get to pretty much custom-make a version that tickles your taste buds best.
This recipe includes nuts, goji berries, and coconut. But you could pretty much use any nuts, seeds, and dried fruit that you may have on-hand.
I used my homemade muesli to assemble delicious parfait cups topped with fresh blueberries – let your imagination run wild!
- 300g organic steel-cut oats
- Half cup roughly chopped almonds
- Half cup roughly chopped brazil nuts
- Half cup desiccated coconut
- 3 Tbs coconut oil (melted)
- 2 Tbs honey (melted)
- Half cup goji berries
- Yoghurt and fresh berries to serve
1.Pre-heat oven to 180 degrees celsius.
2.Place oats, nuts, coconut, coconut oil, and honey into a bowl and stir until well incorporated.
3.Spread oats evenly onto a large baking tray lined with baking paper and place in oven.
4.Stir every 5 – 10 minutes for 25 minutes.
5.Pour goji berries over the muesli and place in oven for another 5 minutes.
6.Take out of oven and allow to cool completely.
7.Serve with yoghurt and fresh berries.
8.Store homemade muesli in airtight container, where it’ll stay fresh for a few weeks.
