Valentine’s Day is around the corner, and as much as I love the extra opportunity to show how much I love and appreciate the special people in my life, I try not to buy into the complete commercialization of the day.
So while last year, I rustled up some homemade tapas for my love, this year I’m making it even easier by banging out this super quick banana, mango, and coconut smoothie bowl. Don’t underestimate the gesture – decorating this smoothie bowl is a real labour of love!
Besides, my banango smoothie bowl is incredibly nutritious, and what better way to love someone on Valentine’s Day than nourish them?! Just pour it into a giant pasta bowl and dig in with two spoons.
Handful baby spinach
1 large frozen banana cut into chunks
1 large ripe mango cut into chunks
Half a cup coconut cream
Squeeze of fresh lime juice
Tbs chia seeds (optional)
Handful goji berries (optional)
Handful blue berries (optional)
1. Place spinach, banana, mango, lime juice, and coconut cream into blender or Nutribullet, and blend until smooth.
2. Pour into large bowl and decorate as desired with chia seeds, goji berries, and blueberries.
