This bacon and broccoli cheddar bake soup is pretty much a cheesy broccoli bake in liquid form! I know that doesn’t sound extremely appetizing, but stay with me..
I started off with the intention of making a classic broccoli soup, and ended up with something far more interesting.
It’s amazing what you can do with some creativity and whatever you have left in your fridge! I had some bacon that needed using, and once that caught my eye the whole idea just kinda snowballed. I’m so glad too because this has become a winter staple in my house.
Bacon, broccoli, and cheddar are a delicious trio, but the surprise of pickled jalapeños lifts this soup to new heights. Of course, if you’re not into that, you could just leave them out. But there’s something about their piquant offering that makes this bacon broccoli and cheddar bake soup all the more pleasurable.
How to make bacon and broccoli cheddar bake soup
- 1 onion diced
- 4 garlic cloves chopped
- 1 large sweet potato, or 2 regular white potatoes diced
- A glug of white wine (optional)
- 3 cups chicken or veg stock
- 2 medium heads of broccoli chopped into florets
- 1 cup milk
- 1 pack of bacon chopped
- 2 cups of grated cheddar cheese
- 2 heaped Tbs of cream cheese or smooth cottage cheese (optional)
- 2 Tbs pickled jalapeños chopped (optional) Add as much jalapeño as like depending on how hot yours are.
- Chopped parsley or coriander to serve
1.Saute onion in a pot until translucent, and then add garlic to saute until fragrant.
2.Add potatoes to the pot and saute until they begin softening. You’ll see that they become translucent.
3.Deglaze the pot with a glug of white wine if you have any on hand.
4.Add the stock to the pot and bring to a simmer. Cook potatoes until tender.
5.Add broccoli to the pot and allow to simmer until both potatoes and broccoli are soft.
6.Meanwhile, fry bacon until crispy, and set aside for use later.
7.Add milk to pot and warm through.
8.Use stick blender to puree soup, stir through cheddar cheese, as well as cream cheese or cottage cheese if you have any on hand.
9.Add chopped jalapeños and half the bacon bits and stir through. Use the rest of the bacon bits for topping the soup.
10.If at any time you want to loosen the soup, simply add more milk and stir through.
11.Sprinkle with fresh herbs, and serve with bread.
